		<description>Hi Joanne, so sorry for the late response, we missed this question somehow.  Yes, our organic Vitamin D milk is homogenized. Our consumers depend on the milk to be the same throughout the carton, the same milk fat, protein, vitamins.  Also, they do not want a glob of cream pouring into their glass. When they encounter a glob of milk at the top of the container, they are concerned that the milk is spoiled.</description>

To lower the fat in milk from whole milk, which is 3.5% butterfat, to reduced fat milk, which is 2.0% butterfat, the milk is spun in a centrifuge(it is called a separator). The butterfat is less dense than the rest of the milk so it spins out the top of the centrifuge. This process is strictly a physical process and does not change the characteristics of the fat or any other portion of the milk.

Thanks for your question. During our pasteurization process we heat the milk to 177°F for 26 seconds and then cool it back down to below 40°F. This is a process scientifically validated to kill harmful organisms which ensures the safety of the product, but we feel it is gentler on flavor than ultra-pasteurization so it preserves that fresh milk flavor.
